BAKED SPUDS
Ingredients
2 medium spuds per person.
2 Spring Onions per person, sliced.
Salt
Freshly ground Black Pepper.
Preparation
Select 2 medium nice condition spuds per person. Wash, remove any unwanted bits and dry in
paper towels or a tea-towel.
Cut the spuds length-wise, rub salt into the skins and sprinkle lightly on the flesh,
sprinkle on fresh ground black pepper and then place the spring onions on top. Wrap the two
halves together in aluminum foil. Fill slow cooker/Crock Pot with the spuds. Cover and cook on
Low setting for 8 to 10 hours, or on High setting for 2 1/4 to 4 hours.
Be sure not to add any water.
If you don't have a slow cooker, you can use any oven-proof dish and use 100 Deg C for slow
cooking and 300 Deg C for fast cooking. This is a healthy low fat recipe, great for your healthy eating diet, and tasty too!
